Just wondering about the analog in RCAs. Can I connect a MM turntable and get a sound output with the gain set at +6db, or do I need a phono stage amp between the two?

Phono preamps are not just amping up the signal. They're applying specific equalization to "normalize" the signal. Without it, the frequency response won’t be as intended. Check "RIAA equalization" on Wikipedia for more about this.
